These traditional Swiss almond-flour cookies boast a rich chocolate flavor, a light nuttiness, and a fun, chewy texture.

Method

Ingredients
  • 750 gGround almonds or almond flour
  • 1100 gGgranulated sugar
  • 145 gGuittard Cocoa Rouge
  • 55 gAll-purpose flour
  • 10 gCcinnamon
  • 5 gCround cloves
  • 295 gEgg whites
Directions

    Blend all ingredients except the egg whites. Add egg whites and mix until it comes together. Do not overmix!

    Roll to approximately 7mm (1/4") thickness. Thicker is better. Sprinkle liberally with granulated sugar.

    Mark with grooved rolling pin and cut into a 40mm (1.5") round shapes.

    Bake at 340°F for approximately 10 minutes. Do not overbake!
