An earthy spin on this classic cookie, made with 3 different flours.
3/4 cups + 2 tbsp [200g] unsalted butter, softened
1 1/3 cups [200g] coconut sugar
1 [60g] egg
½ cup + 1 tbsp [80g] spelt flour
½ cup + 1 tbsp [80g] whole wheat flour
1/3 cup + 2 tbsp [60g] rye flour
½ tsp baking powder
½ tsp salt
1 tsp vanilla extract
1 ¼ cups [200g] Guittard 72% Santé Baking Chips made with Coconut Sugar
Preheat oven to 320°F. Line a baking sheet with parchment paper. Beat together the butter and sugar. Add egg and vanilla extract. Gradually add all dry ingredients, and continue to mix until just combined. Add in chocolate baking chips and mix until combined. Scoop the dough into approx. 1 1/2 oz [45g] balls, and onto baking sheet. Bake for approximately 9 minutes or until just golden brown.
