3 bars [90g] Guittard 70% Cacao Bittersweet or 64 % Cacao Semisweet Chocolate broken into pieces
2 ¼ cups [531g] whole milk
1 ½ cups [354g] heavy whipping cream
¼ cup [50g] sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
¾ teaspoon vanilla extract
1/8 teaspoon salt
Combine ingredients in heavy 3 quart saucepan over medium-high heat whisking constantly until chocolate is melted. Use hand held wand blender or strainer to smooth out any specks. Serve immediately.
