170g Guittard 72% Santé Baking Chips made with Coconut Sugar
20g Butter
7g Vanilla Bean
Total Weight: 480g
Heat cream and maple syrup to a simmer. Pour over the chocolate, allow to rest for one minute. Stir to combine.
At 38°C add butter and emulsify with an immersion blender.
